Aspartame cannot be used in baking or cooking since it is sensitive to heat. Once ingested aspartame breaks down into aspartic acid, phenylalanine and methanol and further breaks down into formaldehyde, formic acid and diketopiperazine.


There have been many lab tests that have been conducted. Carcinogenicity studies have shown an increase in cancer, lymphomas and leukemia.
